Cold (or Swine Flu) Remedy 1 large sweet potato (or a few small ones), peeled and cubed 1 red onion, diced 3 cloves of garlic, minced ½ teaspoon each of smoked paprika, powdered ginger, and ancho chili powder ½ jalapeño seeded and finely minced 2 handfuls of cherry tomatoes, sliced in half 1 can of garbanzo beans/chickpeas 1 tsp honey 1tbsp Dijon mustard (sounds weird, but is very very delicious) 3 cups vegetable stock 2 handfuls fresh spinach In a soup pot, brown sweet potato, onion and garlic- season with salt and pepper. Add chickpeas, jalapeño, tomatoes, spices, honey, and mustard cook for several minutes. Fill the pot with vegetable stock and add water until vegetables are submerged. Bring to a boil, then reduce heat to simmer for 20-25 minutes. Add spinach after heat is off, grab a tissue for your runny nose, and feel better!
